This happy foursome is made simply from yogurt blended with berries, boosted with lemon and citrus-flavored baobab powder, and topped with various jewels from granola to popped quinoa. Parfait layers are only limited to your imagination, and they are so pretty, they are bound to boost your mood – and energy and immune system – all day!
makes about 4 parfaits
- 1 cup fresh strawberries
- 1 cup fresh raspberries (or 1 frozen pink pitaya pack)
- 4 cups plant yogurt
- 3 tbsp fresh lemon juice
- 2 tbsps baobab powder (I use this brand)
