- 1/2 cup rolled oats (my gluten-free brand is here
- 1 cup nut milk
- 1 tsp chia seeds
- 1/2 cup frozen raspberries or strawberries
- 1 tbsp pecans
- 1 tbsp pumpkin seeds
- 1 tsp baobab powder (the raw brand I use is here)
METHOD Stir all ingredients into a jar, cover and put in the frig overnight. The next morning, stir again and enjoy!
Makes 2 1/2 cups
Soaking them as opposed to cooking them keeps them raw obv, and improves their sometimes-difficult-digestibility by breaking down their starch and reducing their natural phytic acid with the overnight soak. Nutrient-wise, they are high in resistant starch, which helps you feel full longer, and rich in magnesium, fiber, plant-based protein, potassium, and they contain no sugar.
