Chocolate Mousse Cherry Parfait. Chocolate and cherries have ingredients that boost your mood, help you sleep, and other benefits. Cacao powder, for instance, stimulates the release of endorphins and may have an anti-depressant effect as well as reduce high blood pressure and improve circulation. Cashews add healthy protein, dates add fiber. Cherries, of course, help you sleep, being a source of melatonin.
- 1/2 cup raw cashews, soaked overnight
- 1 can coconut milk – use the liquid and cream
- 1 cup homemade date paste (my recipe below*)
- 1 avocado
- 1/2 cup cacao powder
- 1 tsp maca powder
- 2 tbsp cacao nibs
- 1/2 cup nut milk
- 1 tbs chia seeds
To build, blend the chocolate layer, and add chia layer, and a few spoonfuls of date paste, as well as toppings of fruit and cacao sprinkles. Enjoy!
*Date Paste How-to: Soak 1 cup raw medjol dates in water over night; pit, blend with 1 tbsp lemon juice. For recipes, 1 tbsp of paste equals 1 date. Keeps 1 week in frig.
