Beets are rich in color and antioxidants, and combined with low fat coconut milk, cherries and chia, make this one of the healthiest smoothies known to man. Roast the beets for 20 min, peeled at 400 degrees, or throw them raw into a blender if you have a vitamix or blendec. Sweetener? We don’t think its necessary, but if you disagree, try a tsp of honey or maple syrup.
