For 1 cake, you’ll need:
- 2 medjool dates, soaked & pitted
- 1 tbsp ground flax seeds
- 1 tbsp sunflower seeds
- 1 cup coconut shreds
- 1 banana
- 3 tbsp lemon juice
- 1 tsp green tea
Take the seeds for a whirl in the blender until they become floury. Drop in the dates, until you have a sticky goo and then press it into a minature springform mold. Once the crust is pressed in, pop them in the freezer.
Clean out the blender and drop in the coconut, banana, lemon juice and green tea. Blend again until creamy. After the crusts have chilled about an hour or so, split the mixture. Spoon in the first half and freeze for another 2 hours. Add the second half, and dust with raw Matcha powder.
