METHOD Throw all ingredients in blender, blend smooth, pour chocolate layer into molds, pop in freezer for 15 minutes, insert sticks, freeze another 4 hours or overnight. To remove, dip mold in a pot water and tug until they slide out. It’s quite a process, don’t let anyone tell you removing is easy. BUT once they are out, decorate and eat! !
- 1/2 cup raw cashews, soaked overnight
- 1 can coconut milk – use the liquid and cream
- 1 cup homemade date paste (my recipe below*)
- 1 avocado
- 1/2 cup cacao powder
- 1 tsp maca powder
- 2 tbsp cacao nibs
- Makes 8-10 pops – I used this popsicle mold
*Date Paste How-to: Soak 1 cup raw medjol dates in water over night; pit, blend with 1 tbsp lemon juice. For recipes, 1 tbsp of paste equals 1 date. Keeps 1 week in frig.
