- 2 persimmons, cored and chopped
- 1/2 cup coconut yogurt
Lemon Yogurt Layer
- 1 1/2 cups coconut yogurt
- 1 tsp baobab powder (I use this brand)
- 2 tbsp fresh squeezed meyer lemon juice
Blend up two persimmons, and 1/2 cup of coconut yogurt. You can buy it or make your own, here is my recipe for faux fast coconut yogurt. Once the persimmon layer is prepared, spoon it into chilled glasses, refrigerate and blend up more coconut yogurt, mixing in the baobab and meyer lemon juice. Top the persimmon layer, sprinkle with coconut shreds and hemp hearts, and enjoy!
