This parfait is built with pineapples, coconut yogurt, buckwheat, and more which are all healthy but today I celebrate the nutritional value of limes! Limes, that sweeter citrus fruit cousin of the lemon, is rich in Vitamin C of course which boosts your immunity and can act like coffee to wake you up, but limes also hold caches of calcium, magnesium, potassium, phosphorus, vitamin A and B vitamins. And limes have flavonoids which act as antioxidants that protect your body from unstable molecules that damage healthy cells. So pour that lime juice into your parfaits, smoothies, juices. It will sweeten it and up the nutritional value enormously!
