Berries are full of antioxidants and bananas are full of potassium and fiber — use them to create a delicious creamy meal! This nicecream recipe is especially creamy because of the addition of plant milk. I used almond, but hemp milk, cashew milk, your favorite, also works. And dressing it up with flowers and toppings make it fun to eat. Enjoy!
Blueberry Raspberry Nicecream Parfaits
Makes 2-3 cups
- 3 frozen bananas (peel, chop and freeze overnight)
- 1/4 cup frozen blueberries
- 1/4 cup frozen raspberries
- 1/4 cup plant milk
- 2 tbsp maple syrup
Blend up frozen bananas, milk and syrup until creamy.
Set aside 1/2 cup and blend the rest with the berries.
Build the parfaits in alternating layers and top with more berries.
