Chilled Lime Pea & Spinach Soup.
Combining peas and lime in a soup is refreshing and nutritious.
The spinach tempers the slightly sweet flavor of the peas, keeping it green and savory.
Of course the herbs give it depth while the lime brightens everything.
This soup is ideal in hot and cold weather, being refreshing and comforting at the same time.
And, as is my trademark, it is super easy to throw together.
Just the ingredients and a blender are all you need. Vegan, dairy-free, and no cooking needed! Let’s make this soup!
Chilled Lime Pea & Spinach Soup
- 2 cups frozen peas
- 1 cup spinach
- 1/2 cup water
- 1 handful of cashews soaked
- 1 clove garlic
- 5 scallions chopped
- Juice of 2 limes
- 2 mint leaves
- 1 tsp fresh thyme leaves
- pepper and salt to taste
This is a cold soup, thus super easy prep.
Just chop the scallions, herbs and garlic and set aside.
Soak the cashews in hot water 1/2 hour or more.
Make sure the peas start frozen, but thawed 1/2 hour on counter.
- Then toss it all in the blender - the peas, spinach, water, cashews, garlic, scallions, lime juice, mint and thyme.
Serve chilled with a twirl of plant yogurt.
