Cookie Dough Cashew Coffee
Cookie dough cashew coffee is a chilled dessert in a glass! And it is so deceptively easy. And my ingredients are selected for nutritional power, so don't worry about any sugar overload. And the combination of pouring warm coffee over chilled cookie dough actually has some affogato tones.
An affogato is an Italian coffee-based dessert whereby one pour a shot of hot espresso over a scoop of vanilla ice cream. While that sounds delicious and very desserty, so is my cookie dough cashew coffee and it's healthier and full of protein and fiber and energy-boosting nutrients.
Is Cashew Milk Good In Coffee
A resounding, YES! Actually let's replace "good" with awesome, shall we?
Those of you familiar with the creamy benefits of coffee creamers know how delicious a creamy addition can be in coffee.
Well, move over dairy or milk creamer, tossing in a handful of cashews does the same thing to your coffee and more!

What is The Benefit of Cashew Milk?
Cashews taste delicious, don't they? All buttery and only faintly nutty for those who aren't completely on the nut flavor train. Adding them as a cashew milk to coffee boosts your coffee to new nutritional heights. because cashews are healthy for you. Let me count the ways.
In general, cashews are low in sugar, and yet so high in fiber, healthy fats, and a great source of mood boosting magnesium and a few other essential nutrients not easy to find in other plants. The healthy fats are wonderfully useful to your body, supporting your heart, boosting your metabolism, and helping you feel full longer, and provide a slow-burning energy fuel.
So, a mug of cashew coffee is actually considered a healthy weight-loss booster, precisely because of the feeling of satiation it imparts.
How to Make Cashew Milk Creamer?
You can of course create cashew milk by blending cashews and adding some water and straining. But you don't need to for this coffee. Just make hot coffee, I make about 1 ½ cups of it.
Put it warm in the blender, along with about ⅓ cup of rinsed cashews. I say rinsed to remove any surface debris and a coating called saponins that can taste bitter. Then blend until specs are gone.
For my in my high speed Blendtec, it took about 1 minute. Tada! A velvety creamy cashew coffee base.
Which Cashew Is The Best?
It is best of course to use a raw and unsalted and unroasted cashew. I buy mine organic from Whole Foods. And yes, it's true, when using cashews, it's a thing to soak them 4 hours or overnight, then rinse and use. But guess what?
For this coffee, you only need to rinse them. That's because the hot/warm temperature of the coffee helps them blend into a creamy, dreamy consistency.
How To Blend Unsoaked Cashews
Of course, because your coffee is going warm/hot into the blender, be sure the little opening at the top is a bit loose to let out some steam, but not enough to spray your kitchen. Or you can just watch your blender and if it is whistling at 30 seconds, stop it and release the cover for a moment to allow the build up of steam free, then restore the cover and continue blending.
Of course, if you WANT to soak them, be my guest. Just submerge in water and leave in the refrigerator overnight. There is some controversy over the bitter saponins in cashews actually leaching into the nut with too much soaking so I'd opt for a few hours of soaking.
And you actually should soak them if you want to make an iced cashew coffee because blending raw cashews in cold coffee will not be creamy, specks of cashews will remain.
How To Make Cookie Dough Cashew Coffee
We spend a lot of time talking cashew coffee but what about the cookie dough part? And the drink itself!
Okay! Let's build a Cookie Dough Cashew Coffee!
First you need a great cookie dough recipe. I just happen to use my edible cookie dough using white beans here.
Make it, freeze it for a few hours, and roll into balls about as big as a ping pong ball (anyone play that game? I love it. We used to have a table and I remember my six year old daughter always beat me. Not great for me considering I was once captain of my tennis team in college, haha) Anyway, back to the drink..
Take a mug, chill it for a few hours. I used a bell jar mug with a handle. Decorate the sides with drizzles of chocolate and date caramel.
Pop in enough rolls of cookie dough to build up to the top.
Make your cashew coffee, pour it into the mug. The pouring melts the cookie dough into a delicious frappe like consistency.
Top with coconut cream, marshmallows, cookies, more chocolate drizzles.
You have now joined the ranks of the cashew coffee elite. Welcome.

Cookie Dough Cashew Coffee
Ingredients
- 1 ½ cup hot brewed coffee
- ⅓ cup cashews raw, unsalted, unroasted
- ½ tsp vanilla
- pinch salt
- 1 date or 1 tbsp of maple syrup (optional if you want it sweeter)
Instructions
Make Cashew Coffee
- Brew coffee and set aside to go from piping hot to mildly hot.
- Add warm/hot coffee to high speed blender, add cashews, vanilla and salt. Blend until creamy with foam on top and cashew specks gone. If you don't have high speed blender, boil cashews first for 2-3 minutes to soften, or soak for 3-4 hours in water.
Make Cookie Dough Cashew Coffee
- Make cookie dough. I use my recipe found here. It uses white beans and is easy to blend up in a blender or food processor.Chill or freeze the dough so it is scoopable. Scoop into balls.
- Drizzle chocolate and date caramel on the inside of a mug.
- Stack cookie dough balls inside.
- Pour warm cashew coffee directly into mug and on top of cookie dough balls.
- Top with whipped cream, marshmallows, cookies and drizzle with chocolate. Yum. Drink right away. This drink keeps a few hours in the refrigerator but not really overnight, it will separate.
