Dragonfruit Lime Sparkling Parfait! This healthy parfait refreshes your morning with a frosty citrus taste, and loads of nutrients. Dragonfruit, or pitaya, is rich in vitamin C, B1, B2 and B3, and minerals such as iron, calcium, and phosphorus. The zucchini adds potassium, and buckwheat groats contribute more nutrients, and both add a mountain of antioxidants.The sparkle comes from frozen nut milk cubes, and the tart taste of lime and immune-boosting superfood Baobab. Refreshing and healthy!
Dragonfruit Lime Sparkling Parfait
- Freeze plant milk in one ice cube tray, preferably a tray with smaller boxes so you don't break your blender.
I allow the cubes to melt a bit before putting them in the blender.
Add in the pitaya and zucchini, both also a bit thawed, baobab, lime juice and only 1/4 cup of the buckwheat groats.
Blend until smoothie, layer with plant yogurt and fruit and remaining buckwheat groats, and serve topped with granola and twists of lime!! Enjoy!
