Cinnamon Overnight Oats Recipe
- 1/2 cup rolled oats (I use (this brand)
- 1 tsp lemon juice (to make oats more digestible)
- 1 cup nut milk
- 1 tsp chia seeds
- 1 tbsp cinnamon
- 1/2 tsp vanilla
- 1 tbsp maple syrup
- 1/2 cup chopped apple [optional]
METHOD Stir all ingredients into a jar, cover and put in the frig overnight. Stir the next morning, top with your home made nut butter and fruits and enjoy!
To make the nut butter, combine in a food processor or high speed blender 2 cups nuts (dry, raw either cashews, almonds, hazelnuts without skins), 1 tbs coconut oil and a pinch Himalayan salt. Spin the nuts until you have a creamy consistency. (Do not soak these cashews as you would for a raw dessert). Then add the coconut oil and the sweetener, and keep blending or processing until smooth. I did this for a VERY long time because my crew requires smooth nut butter..
