METHOD Prepare the crust first, blending ingredients, adding the water last to be able to hold back if the crust seems too sticky. You want to be able to press it into a parchment lined pan. Once pressed, freeze the crust for 30 min. Meanwhile, blend the cake layer, and pour on the crust. Freeze for 30 minutes or for longer for an icy treat. Enjoy your chocolate-y, frosty fruity dessert!
Dragon Fruit Cake Layer
- 2 cups frozen dark pink dragon fruit (Pitya). Found in some grocers or online here (not an affiliate link).
- 2 tbsp lemon and lime juice, combined
- 1/2 cup water or ice
- 1/2 cup soaked cashews
- 3 tbsp coconut oil
Dark Chocolate Crust
- 1 cup pecans
- 1/4 cup coconut flour
- 1 tsp vanilla powder
- 1/4 cup coconut oil
- 1/4 cup water (or less if it is sticky)
- 4 tbsp coconut nectar
- 3 tbsp Black Cocoa (I use this brand)
