Lemonade Raspberry Cashew Cream Mousse Parfait! This cashew-creamy festive parfait is the perfect breakfast with two special superfoods. The lemon adds vitamin C and freshness, the raspberries fiber and berry-nutrients, and the cashews in the mousse and yogurt contribute protein that your body needs to function at its best all day long! Make or buy the plant yogurt, make the mousse the night before – just blend soaked cashews and berries – and stir in the lemon in the morning. As with any morning citrus recipe, we always like to add superfood Baobab which is a super super food contributing a slew of nutrients, is a probiotic and high in fiber. And finally we recommend adding dandelion root. It is best to make it as a tea, and add 1 tsp per parfait. The nutritious benefits are enormous: including support and cleansing of digestive system, liver, bladder, circulation and even skin. Perfect nutritious breakfast to support a busy day!
- 1 cup raw cashews (soaked 1 hour in cool water; 15 minutes in just boiled water)
- 1 tsp baobab (I use this brand)
- 2 tbsp buckwheat groats or granola
- 1 tbsp chia seeds
- 1 cup raspberries
- 1 1/2 cups plant yogurt
- 1 tbsp lemon juice
- 2 tsp brewed dandelion root tea
For the pink base, blend the raw cashews, raspberries and 1/2 cup plant yogurt. Refrigerate if making the night before. In the morning, stir in lemon juice, baobab powder and dandelion root tea. Pour in cups, and start layerings: First add the buckwheat groats or granola, top that with a little chia pudding (mix the chia seeds with a bit of yogurt), top all that with the remaining yogurt, top with fruit and more and enjoy a festive fruity powerful breakfast!
