    A festive peppermint smoothie bowl, made pink with berries and cool and minty, stress-reducing peppermint tea. Perfect pretty bowls to place on a holiday brunch table.

    Peppermint smoothie bowl is a mood booster in more ways than one. Not only is it festive and minty, it's also pink thanks to goji berries, known for being a mood booster. Like my Ginger Tea and Magnolia Tea Smoothie, this smoothie is flavor with flavorful herbal teas.

    Why You'll Love This

    Easy to make. The base of this smoothie is protein-rich yogurt, enhanced with both peppermint tea and pink goji berry tea. The peppermint tea brings a delicious bright mint flavor as well as nutritional benefits. And the  pink goji berry tea does something similar.

    Nutritional contribution.  Goji berries, also called wolfberries, are full of vitamin c and iron, and boost moods. Peppermint tea eases stomach upsets, relieves headaches and calms bacterial infections.

    Ingredients

    yogurt - I used dairy-free cashew, but any yogurt works.

    zucchini - Buy organic because zucchini absorbs pesticides. Peel it here unless you don't mind the green specks in your pink smoothie.

    strawberries - frozen will help give a thicker texture

    goji berry tea - Steep dried goji berries.

    peppermint tea - Make peppermint tea from 3 tea bags. 

    maple syrup - add to taste for sweetness.

    How to Make

    step 1: Make the two teas

    • Make concentrated goji berry tea by steeping ¼ cup dried goji berries in ½ cup of water for 5 minutes. Strain, and add the resulting tea to the blender.
    • Make a concentrated peppermint tea from 3 tea bags. Steep them in ½ cup of boiled water for two minutes. Pour resulting tea into blender.

    step 2: Add the teas and the rest of the ingredients to the blender.

    step 3: Blend up your smoothie, and serve with crushed peppermint and gingerbread cookies on top, and even a drizzle of coconut butter!

    Substitutions

    Sweetener. Instead of maple syrup, toss in a pear or a cup of green grapes to sweeten instead.

    Peppermint tea. Instead of tea, add peppermint extract.

    Ingredients
      

    • 2 cups yogurt I used cashew

    • 1 tablespoon maple syrup
    • ½ cup strawberries
    • ½ cup goji berry tea
    • ½ cup peppermint tea
    • crushed peppermint candy

    Make smoothies

    • Add the rest of the ingredients to the blender. Blend up your smoothie, and serve with crushed peppermint and gingerbread cookies on top, and even a drizzle of coconut butter!
      2 cups yogurt, ½ cup zucchini, 1 tablespoon maple syrup, ½ cup strawberries, ½ cup goji berry tea, ½ cup peppermint tea, crushed peppermint candy

    Notes

    Sweetener. Instead of maple syrup, toss in a pear or a cup of green grapes to sweeten instead.
    Peppermint tea. Instead of tea, add peppermint extract.
    Ingredients. Any yogurt can be used. Buy goji berries dried and in a package, often found in the supplements area or even where raisins are sold.
    Top the bowl with cranberries, strawberries and crushed peppermint candies.

      How did you use the crushed peppermint candy instead of peppermint flavor or peppermint tea?

        Hi Kellie, I only topped the smoothie with the crushed candy, and we didn't actually eat that, it was more for staging purposes. The peppermint flavor in the smoothie comes from the two options I list in ingredients of peppermint tea (my favorite) or peppermint extract or flavoring.. Enjoy! Dee xx
