Pineapple Lime Coconut Parfaits – Easy Immune-Boosting Smoothie
This particular parfait is built with pineapples, coconut yogurt, buckwheat, and more which are all healthy. An easy immune boosting smoothie! And today part of the immunity-boost is coming from limes!
Limes, that sweeter citrus fruit cousin of the lemon, is rich in Vitamin C. This popular vitamin boosts your immunity and can act like coffee to wake you up, but wait, limes do more!
How is This An Easy Immune-Boosting Smoothie?
They hold caches of calcium, magnesium, potassium, phosphorus, vitamin A and B vitamins. And limes have flavonoids which act as antioxidants that protect your body from unstable molecules that damage healthy cells.
So pour that lime juice into your parfaits, smoothies, juices. It will sweeten it and up the nutritional value enormously!
You can use any yogurt of course, although coconut yogurt is strong in anti-inflammatories. And if you want to make it yourself, here is my easy homemade coconut yogurt recipe. Actually it’s not serious yogurt – as in let it ferment for days. I just stir in a probiotic capsule and call it a day!

Pineapple Lime Coconut Parfaits (immune-boosting, anti-inflammatory)
Boost your immunity system and overall well-being with a nutritious-rich tropical breakfast cup. Easy to prepare and keeps overnight if you want to make it ahead.
Make or buy your coconut yogurt. I provide a homemade recipe in my blog post.
Mash the pineapple with a fork
Rinse the buckwheat groats to remove the slippery coating.
Rinse your quinoa to remove the bitter coating, and dry toast or pop them in a dry pan. Stir them about until you hear some tiny pops and keep going until the sound stops and the quinoa smells toasty. Don't burn it. You can also try buying air-puffed quinoa although I have some trouble finding that in the United States. I bought one package - you see in the picture, but that company is no longer supply it.
Layer the yogurt with pineapple, buckwheat groats, popped/puffed quinoa and squeeze lime juice over it all. Serve chilled.
