Pumpkin is endlessly fun and colorful, and is so nutritious! Full of antioxidants, fiber and many vitamins, especially vitamin E, great for skin, and vitamin A and carotenoids, offering incredible eye protection. And it’s easy to slip into so many recipes, including nicecream – healthy ice cream made from frozen bananas!
Pumpkin Cinnamon Spice Nicecream
makes 4-5 cups
- 3 frozen bananas
- 1 cup organic pumpkin puree
- 1/2 cup nut milk
- 1/2 cup cashews, soaked
- 2 tbsp maple syrup
- 2 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
Break up bananas and freeze overnight.
Soak 1/2 cup cashews overnight, then rinse before use
Blend all ingredients, and serve immediately with toppings!
