Such a nutrient dense parfait! Red pears are full of fiber and minerals, but the red skin is especially high in phytonutrient anthocyanin, which helps against anti-aging, supports heart health and protects against disease.
While it is so nice to feel great after a breakfast, it is also fun to eat something so decadent and delicious that it could also serve as dessert.
makes 1 large parfait
- 2 cups cashews, soaked at least 30 min
- 1 cup water
- 2 figs, fresh
- 1/2 chopped red pear
- 1 tbsp maple syrup (add more to make it sweeter)
- 1/2 tsp vanilla powder (I use this brand)
- 3 tbsp granola
