Simple Chia Caramel Chocolate Granola Parfait (high-protein, vegan, dairy-free)

I have already shared several homemade plant yogurt recipes here and here, and so today I am happy to share with you a date-caramel sauce recipe that is a bit involved (pitting and blending 15 dates..) but well worth the work, and a simple chocolate granola recipe.
All these ingredients are so fresh and full of nutrients and fiber and protein, you will not be hungry for a long long time after this breakfast – a perfect storm of recipes for a healthy breakfast or snack.

Simple Chia Caramel Chocolate Granola Parfait (high-protein, dairy-free)
Homemade Caramel Sauce
- 15 dates, pitted, and soaked overnight in water
- 2 tbsp water
- 1 tsp maple syrup
- 1 tsp mesquite powder
- pinch salt
Make the date-caramel
Blend caramel recipe ingredients in blender until smooth, adding a bit more water if necessary to achieve a smoothie finish. Store in a covered container in the refrigerator for up to one week.
Make the chocolate granola
Toss the chocolate granola ingredients together in a bowl, spread on cookie sheet, bake at 300 degrees F for 10 minutes to dry and crisp, cool.
Stir 1 tsp chia seeds into plant yogurt. Layer that with the caramel and granola, and top with more granola, fruit, nibs and more caramel!
