makes 2-4 waffles
- 1 banana
- 1/4 cup ground walnuts (I ran them through a food processor to grind mine)
- 3/4 cup gluten-free flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp coconut oil
- 3/4 cup nut milk
The walnuts are not absolutely necessary, but they do add a floury-nut-oil element to the texture, so don’t just add more flour to replace it, add a mix of flour and coconut oil.
Finally, I should warn you that they cook fast – I actually think I will cook mine less next time so watch and test – each waffle maker will have it’s own personality on that. Good luck and tag me on Instagram if you make them!
