Strawberry Dragonfruit Cashew Cream Parfait! I love parfaits, so easy to toss a bunch of healthy ingredients in a cup for breakfast or snack. And pitaya is high in magnesium which helps with sleep, iron, fiber, antioxidants and vitamin C. Cashew cream is full of protein, and Baobab is energizing. So this breakfast is particularly healthy, and just plain fun.
makes 4 cups
- 1 cup plant yogurt
- 1 cup raw cashews, soaked at least 30 minutes to soften
- 1 tbsp white chia seeds (I use this brand)
Blend all ingredients until smooth, and pop it on to a bed of plant yogurt and buckwheat with banana stars on the sides of the jar. I also topped mine with more yogurt and a squeeze of lime and, yes, tiny purple Campanella flowers from our garden. Enjoy!
