I am so in favor of breakfasts that are as full of nutrition as possible. So overnight oats, smoothies are wonderful options, so easy to slip in fruits and veggies and superfoods and protein and more. I love parfaits similarly because they too are so highly customizable, and this one is no different.
My parfait here is a strong source of protein, superfoods and poppyseeds, which are good sources of calcium, iron and zinc.
Need to make it nut-free? Trade in the cashew butter for sunflower butter or hemp cream. Hemp seeds have a nice balance of protein and quality fat but are low in carbs. Here is my hemp cream recipe !

Strawberry Shortcake Poppyseed Parfait
For the strawberry puree
- 1 cup fresh or frozen strawberries pureed in a blender
- 1 tsp baobab boosts immunity sky high!
For the poppyseed cream
- 1 cup plant yogurt
- 1 tbsp poppyseeds
- 1 tsp maple syrup
- 1 tsp baobab
- 1/2 tsp of vanilla powder
Build the parfait with chunks of vanilla cake (don't have any? Use a cookie or two), pureed strawberry, smears of cashew butter, and poppyseed cream. We topped it with edible cookie batter hearts!
