    Summer is a time for salads, especially salads with a party of flavors.

    This salad fits that description so well. Tomatillos, otherwise known as Mexican green tomatoes, are tart, so pairing them with sweet watermelon is a brilliant contrast. And adding in berries and cooling fresh mint leaves, provides even more levels of flavor.

    And levels of flavor are actually the fun of eating a salad, no? Add in a dressing - I didn't here - and the party is going on until the wee hours of the morning.

    But what are these funny veggies that look like apples dressed in paper bags?

    What Are Tomatillos?

    Tomatillos are a small, green Mexican fruit with a paper shell, like the golden berry.

    Peel off the paper, and wash the fruit which will be a bit sticky. The fruit tastes a bit tart on the lemony side.

    Tomatillos are high in potassium, fiber and other nutrients, including a whopping amount of vitamin C and vitamin K, and of course, very low in fat and calories.

    Yum!

    I topped my tomatillo salad with a bit of black pepper - the flavors are bright enough to not need a dressing. My hubbie, on the other hand, insisted on drizzling his with lime juice. Always the rebel.

    Ingredients
     

    • 2-3 green tomatillos
    • 2 cups chopped watermelon
    • 2-3 large strawberries
    • 6 raspberries
    • ⅛ cup lime juice
    • ¼ cup of fresh mint leaves
    • 2 tsp chopped cilantro
    • salt to taste

    Instructions
     

    • Peel paper shell off tomatillo, rinse off sticky residue and chop.
      Toss these and chopped watermelon and berries into a bowl, toss with cilantro, black pepper, lemon juice and salt to taste! Serve chilled!
