Instructions
Prepare the cucumbers and lemons. Wash the outer skin with soap and water, and dry them. Peel the lemons, don't peel the cucumbers if using English cucumbers. If using other type, then peel.
Cut the cucumbers into small chunks to fit either a juicer feeding chute or into a blender jar or a food processor.
Wash and chop fresh ginger. Scrap off the skin with the edge of spoon or press through a garlic press. Or measure out powdered ginger.
Add the water and other ingredients.
2 cucumbers, ½ cup water, 2 tablespoon lemon juice, 1 teaspoon ginger root, crushed fresh, or ½ teaspoon ginger powder
Process the juicer or your blender or your food processor. If you used a juicer, your juice is ready. If you used a blender or food processor, move to the next step.
Pour the mixture through a strainer and reserve the liquid as your juice. Discard the pulp or freeze it in ice cube trays to add to smoothies for extra fiber.
Enjoy the juice over ice or even use a milk frother to fluff up a froth.

*Cucumber choices. The best for making cucumber lemon juice or plain cucumber juice is English or Persian cucumbers. They are long and thin and wrapped in plastic. Use them unpeel. If you use regular cucumbers, shorter and fatter than the English cucumbers, have a thick dark green skin, you must peel them because their skin is bitter. Unless you use them in the sweet cucumber lemonade recipe.To make plain cucumber juice, to this recipe you'll want to add lime juice instead of lemon juice as lime juice brings out the green cucumber flavor.To make cucumber lemonade, to this recipe you'll want to add an apple, as well as both lime and lemon juice to establish a sweet lemonade flavor.To reduce cucumber bitterness. Reduce the bitter flavor of cucumbers by removing the cucurbitacin which tends to be most concentrated at the cucumber tips. To do this, cut off about one inch of each cucumber tip and use the tip to rub gentle circles on the blunt end of the cucumber.
