Line an 8-inch by 8-inch pan with parchment paper.
In a large bowl, stir up the flour, cream of tartar, soda and salt.
In a different bowl or your blender, cream together the butter, sugar, tofu and vanilla. I use vanilla cream to get the strongest vanilla flavor possible, but you can use extract or powder.
Add the creamed mixture to the flour mixture, and combine well. Use your hands to get a batter that is just short of sticky.
Dollop mixture into parchment-lined pan and spread even, pressing with a spatula to flatten the top.
Sprinkle with just cinnamon or the sugar/cinnamon topping mixture.
