Make homemade strawberry popsicles fast and healthy with refreshing hints of mint. And lemon popsicles with hints of thyme. These healthy popsicles are all fruit and use a quick trick to infuse them with fresh herbs.
In a sauce pan, bubble ½ cup water, and mint for 1-2 minutes - don't let the water boil away. Strain the mixture using a small strainer so you remove the mint leaf solids.
Let the mixture cool a bit, and add to a blender with the other half cup water, strawberries, lemon juice and baobab powder.
Blend until smooth, pour into popsicle molds.
Make the Lemon Thyme Popsicles
Peel the brown skin off the fresh ginger root using the edge of an upside-down spoon. Chop into rough chunks.In a sauce pan, bubble ½ cup water, thyme sprigs, and ginger root for 1-2 minutes - don't let the water boil away. Strain the mixture using a small strainer so you remove the thyme and ginger root solids.
Let the mixture cool a bit, and add to a blender with the other ½ cup water, lemon juice and maple syrup. Taste-test to be sure it is sweet enough for your liking; add more maple syrup if you want it sweeter.
Blend until smooth, pour into popsicle molds.
Freezing the Popsicles
Freeze for 30 minutes, then insert sticks.
Freeze for at least 4 hours or overnight before eating.
Removing Popsicles From Mold
Remove popsicles by submerging mold (not getting popsicles wet) in a tub of hot water, or running the bottom of the mold under hot tap water. Pull out a popsicle, put it in the freezer immediately. Enjoy!
