Make it Blue
¼cupblueberries or blackberriesPuree in a blender with 2 tablespoon of water
Make it Orange
¼cupcarrotsStart with shredded or use a grater to get ¼ cup grated carrots. Puree in a blender in 2 tablespoon of water.
Instructions
Prep
Set butter sticks out early to allow it to get to room temperature.Sift the powdered sugarSet milk out to reach room temperature shortly before making frosting.
Make White frosting
Cream the butter in a large mixing bowl. Add the powdered sugar, tapioca use a stand mixer or hand mixer to beat until combined.
Make Pink Frosting
Make your pink food coloring with either the pitaya powder or frozen dragonfruit or beets. If using beets, convert them into a slurry.To use the powder, add 1 tablespoon of powder to a teaspoon of milk and whisk until you have a pink liquid. Add a bit more milk if the powder needs it to dissolve. Add this mixture 1 teaspoon at a time to your frosting and mix until you achieve the color you want.To use the frozen dragonfruit, add it thawed directly to your frosting. Add this 1 teaspoon at a time to your frosting and mix until you achieve the color you want.To use beet, crush thaw frozen beets or cooled steam beets into a pulp. Mix it with 2 tablespoon of water until you have a slurry. Add 2 tablespoon of water until you have a sauce and add this 1 teaspoon at a time to your frosting until you have the color you want.
To turn some or all of the frosting pink, add in 1 tablespoon of the pitaya puree until you have the color you want.
Make Other Color Frosting
Blend or crush your chosen fruit or veggie into a slurry. Raspberries for red; blueberries or blackberries for purple; carrots for orange.I usually add about ¼ cup of the fruit or veggie to my small blender. If your blender doesn't blend such a little amount, use your food processor or even a stand mixer. And you also might have to double the amount. You can always freeze any extra food coloring puree you make.
Add a teaspoon of water if necessary to get it blending. Carrots even shredded will need a more fierce blending to get a slurry and will definitely need a teaspoon of water to get it blending.
Once you have a fruit or veggie puree, add 2 tablespoon of water to it and blend or process again completely.
To color your frosting with your new puree, add it 1 tablespoon at a time to the white frosting until you have the color you want.
Storing the frosting
Dairy free frosting can keep refrigerated for about a week. It cannot be frozen or it tends to develop cracks.
Fill Cupcakes (optional)
Remove a cylinder of cake by pressing the open end of a piping tip into the top center of the cupcake, twist and pull up. A plug of cake shaped like a cylinder should come out.
To fill the cupcakes, pipe frosting or cream directly into the hole where you removed a cylinder of cake. Then replace the top of the cupcake or not.
