Apple Cinnamon Overnight Oats and Homemade Apple Butter

Spicy delicious apple cinnamon overnight oats, like a glass of apple cider and steamy oatmeal merged. PLUS this recipe has a ripple of homemade raw apple butter stirred in. A wonderful, fragrant spicy fall breakfast, filling and full of fiber.

Make the Overnight Oats

  • 1 cup gluten-free rolled-oats
  • 1/2 cup milk
  • 1/2 cup apple cider (organic apple cider, no processed ingredients)
  • 1 tsp lemon juice
  • 3 tsp walnuts or crushed almonds
  • 3/4 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of sea salt

Homemade Apple Butter - makes about 3/4 cup butter

  • 2 green apples, 2 red apples (organic is important) (To balance sweetness we use green for sour and gala or fuji for sweet)
  • 10 cashews
  • 1/4 cup unsweetened apple cider
  • 1 tsp orange juice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • pinch of ground cloves



  • Prep for both recipes the night before.
    Put the apple butter cashews into the apple cider and let those soak refrigerated overnight.
    Put the rolled oats into the apple cider, milk, and lemon juice refrigerated overnight.

Make the Apple Butter

  • The next day, chop the apples in small chunks. Then process in a blender or food processor the apples into a pulp.
    Add in the additional ingredients, process again. Taste test and add extra maple syrup or spices to taste.
    Keep apple butter refrigerated, and try to use it within a day or two for best flavor.

Make the Overnight Oats

  • Chop the apples into small pieces or even blend them into a rough apple pulp, and fold those into the soaked overnight oats. Stir in spices and maple syrup to taste. And layer that mixture in a jar with fresh apple butter.
    Sprinkle with more cinnamon, fresh apple slices and eat a filling healthy breakfast.
