This is a cold soup, thus super easy prep.Just chop the scallions, herbs and garlic and set aside.Soak the cashews in hot water ½ hour or more.Make sure the peas start frozen, but thawed ½ hour on counter.
Then toss it all in the blender - the peas, spinach, water, cashews, garlic, scallions, lime juice, mint and thyme.
