These chocolate covered blueberries are an easy healthy treat made in 15 minutes with basically 2 ingredients. Use fresh or dried blueberries, and you have options to add nuts or more berries.
Rinse fresh blueberries and allow to dry or pat dry with a paper towel. They must be dry so leave overnight on a pan if possible.
Melt Chocolate
Microwave: Melt the chocolate chips in a pyrex measuring cup in a microwave at 60 second intervals.
1 ½ cup chocolate chips (3 oz)
Stovetop: Add the heat proof container holding the chocolate chips into a pot of boiling water. Be sure no water hits chocolate. Stir until chips are melted.
Mix & Set
Fill bowl. Add dry fresh blueberries to a bowl. Add any optional ingredients now such as nuts.
1 ¼ cup fresh blueberries (6 oz)
Add chocolate & mix. Pour the melted chocolate over the blueberries in the bowl and stir until all are coated.
Spoon clusters. Spoon overflowing tablespoons of mixture in clusters onto the pan.
Chill to set. Place the pan in the refrigerator for 15 minutes.
Enjoy and store.
