Salted Blue Lemonade Margarita Popsicles
Delicious fresh lemon-y margarita popsicles - with or without the liquor - made healthier with the addition of protein-rich blue spirulina! And they are so easy to make, just 4 or 5 ingredients.
Mediterranean, Mexican, vegan, dairy-free, gluten-free
blue spirulina, dairy-free popsicles, healthy popsicles, margarita
water + 1 tbsp blue Spirulina powder
Make Spirulina water
Blend water and 1 tbsp of blue spirulina powder until fully dissolved.
Make Blue Lemonade Margarita
Squeeze your lemons and limes to gather 1 cup of juice combined.
Stir in a container (I used my blender pitcher), the blue water, juices, tequila and blue curacao. Add the maple syrup and taste-test, add more if needed.
Make the Popsicles
Pour the mixture into the popsicle molds. Freeze the mold for 1 hour and then insert sticks.
Freeze the mold for another 4 hours or more.
Remove popsicles by submerging mold (not getting popsicles wet) in a tub of hot water.
Pull out a popsicle, put it in the freezer immediately. If you have included the alcohol, they will melt fast.
I also wet the top of each removed popsicle and dotted on salt to emulate a real margarita. If you don't want to add salt, use coconut shreds - it's tropical!
