Set a sauce pan of water on to boil with about 2 inches of water in it. Line a 5-inch by 9-inch loaf pan with parchment so it hangs over the sides.
Make the Bark
Set a 2-cup pyrex glass (heat-resistent) measuring cup into the boiling water.
Break up the chocolate bar, and put it in the measuring cup - don't let any water splash into the cup, you are just trying to melt the chocolate.
Add the chocolate "nutella" spread and coconut oil.
Continually stir and as the chocolate mixture begins to melt, turn off the stove and carefully remove the measuring cup from the water (don't let any water or moisture into the mix!) and keep stirring until the mixture is smooth and shiny.
Fold in your chosen mix-ins, or hold them back and sprinkle on top. We sprinkled popped quinoa in the mix and then chopped almonds on top.
Pour the melted mixture into the pan, and tap it gently on the counter to allow it to spread to the four corners. This will ensure the correct thickness of your bark.
Refrigerate lightly covered for 1 hour or until it hardens. Don't freeze at this stage or it will develop a haze. However, it can be frozen in an air-tight container for long-term storage.
