These homemade fudgsicles are a frosty popsicle treat using few ingredients, dairy-free, gluten-free and mood-boosting. You'll want to eat the mixture with a spoon but try to save some to pour in the fudgsicle popsicle mold. Not yet popsicle weather? Serve the mixture as a decadent chilled pudding, yum!

Add the cashew milk, coconut milk, vanilla, brewed coffee and avocado to a blender, and process until smooth.
Add the chocolate chips or chunks of chocolate to a pyrex glass measuring cup or other microwave safe container, and microwave at 60 seconds to melt.
Put the blended avocado milk mixture, and the melted chips and the cacao powder (or unsweetened cocoa powder) into a pot on the stove.Turn on the heat and warm the mixture, stirring until all is combined. Do not burn the bottom or let it boil. Turn off the heat and let the mixture cool on the stove for 20 minutes.
Once it is cooled a bit, pour the mixture into molds, pop the mold in the freezer for 30 minutes, then insert sticks. If you don't have a popsicle mold, use paper cups.Sometimes I top the fudgsicles with granola or chocolate chips, your choice. Freeze the fudgsicles 6 hours or overnight.
To remove the fudgsicles, dip mold in a pot of hot water and tug until they slide out. It's quite a process, don't let anyone tell you removing is easy. BUT once they are out, eat!
