These protein popsicles are a creamy lemon flavor, and a gorgeous green thanks to spinach, and protein-rich superfood, spirulina. The sweet frozen treat is an ocean-green frozen treat that melts in your mouth.
Stir the spirulina into 2 tablespoon water to dissolve it.
Then throw all ingredients except for the maple syrup in blender, and blend smooth.
1 cup dairy free yogurt, 2 cups spinach, baby leaves, 1 cup green grapes, ¼ cup lime juice, 1 tablespoon green spirulina powder
Taste test to be sure the popsicles are not too bitter, yet not to sweet. To sweeten, add maple syrup and possibly more lime juice (which actually sweetens and works to offset any bitter flavor in a fresh, citrus-y way.
2 tablespoon maple syrup
Once adjusted, pour into molds. Put mold in freezer for about 30 minutes, then insert the sticks. Freeze the popsicles overnight.
To remove from molds, peel back a silicon mold or run the bottom under hot water and tug.
Storage
Store popsicles frozen up to three months.
Notes
1. Use pears, not peeled, instead of grapes. Don't use red grapes or the color will be muddy.2. Remove from molds by running the bottom of the mold under hot water and tug. Freeze to store.3. Spirulina powder tastes super fishy, but adding green grapes to this recipe offsets that. Lime juice also helps. 4.Store popsicles frozen up to three months.
