Line an 8x8-inch baking pan with parchment paper over-hanging at least two sides.
Stir together 2 tablespoon ground flax seeds and 5 tablespoon of water and set aside for 10 minutes to thicken.

Add sugar and ½ cup of water to a sauce pan, simmer until all sugar is melted. Do not leave it alone or let it boil, and continuously stir. It should take about 2-3 minutes to melt all the sugar and render the water clearish.
1 ½ cup organic cane sugar
Add the melted sugar to a mixing bowl.
Add the rest of the ingredients into that bowl with the sugar.
2 ¼ cups oat flour, ¾ cups cocoa powder, ½ cup olive oil, 2 teaspoon vanilla, ½ cup chocolate chips, ½ teaspoon salt
Mix up batter with a spoon or hand-mixer.
Pour mixture into the baking pan, fold in the ½ cup chocolate chips, layer with broken oreos

Bake for roughly 25-30 minutes or until the top crackles.
Cool and lift the brownies out of the pan using the parchment paper as handles.
I refrigerate them for 30 minutes before cutting to get clean cuts
Storage
Store them in an air-tight container in the refrigerator for a week or longer in the freezer.

Notes
To melt sugar : Be sure to warm the water on simmer for a few minutes. The melting process should take about 2-3 minutes. Baking time : You want the top to crack a bit, but you don't want to burn the edges so watch the baking of these closely.
