Step 1: Peel and slice ginger root. Do not wash beforehand or it will be too hard to peel.

Step 2: Boil the ginger with water and lemon.

Step 3: Strain the ginger slices and keep the liquid to use to make ginger tea!

Step 4: Boil the ginger again only this time with fresh water and sugar.

Step 5: Strain and spread out the slices to dry for about an hour or until they are sticky but not soaked. If they are too wet, the sugar will melt.

Step 6: Dip the chips into sugar to coat. Line them on a pan. They will dry pretty fast and you can eat right away.
