Step 1: How to Choose A Sweet Watermelon - It will have a dull sheen - It will sound hollow when you knock - It will have a yellow stain where it ripened in the field -'2 finger rule' - the green stripes are 2-fingers wide.

Step 2: Scoop watermelon or chop into chunks.  You can keep the seeds since you will be straining.

Step 3: Add the watermelon, lemon juice and salt to a blender.  Quality salt adds electrolytes. Who needs Gatorade!

Step 4: Blend the mixture for about 2 minutes or until everything is combined. Taste-test and add more salt or lemon if desired.

Step 5: Pour the juice through a strainer. Reserve the liquid for your watermelon juice.  Chill the juice for better flavor.

Step 6: Refrigerate watermelon juice in a sealed jar for up to a week.  For long term storage, pour it into ice cube trays and freeze. Put cubes into a glass overnight in the refrigerator to thaw.
