Notes
Storage in Refrigerator. The mousse can be stored in the refrigerator for about 4 days.Storage in Freezer. Avocado mousse can be frozen for up to 3 months. A convenient way is to spread it in a storage bag, flatten, freeze, and break off pieces as you need it. Thaw or eat frozen - it won't freeze solid because of the high fructose content from the date paste.Substitutions1.The date paste can be substituted for ¼ cup of maple syrup or another liquid sweetener however the final product won't be as nutritious or silky.2.The melted chocolate can be omitted, although you might have to add a bit of milk into the blender instead to loosen up the texture. And the flavor won't be as rich.Recipe Tips1. Make sure the avocados are soft and ripe, although not brown. Hard unripe avocados don't make a smooth mousse.2. Use chocolate chips that are 70% cacao or higher so the mousse isn't too sweet.3. Be sure to soak the dates at least 3 minutes in just-boiled water.
