Chocolate Chip Soft Granola Bar (no bake)
A soft, chewy homemade
chocolate chip granola bar
that is
only 4 ingredients
including your favorite granola or cereal. This dairy free and gluten free homemade granola bar is no bake and high in protein, naturally sweetened, and easy to customize.

Ingredients
Bar

granola
use your favorite granola or cereal

pumpkin seeds

cup
chocolate chips
¼
cup
almond butter
¼
cup
water
Chocolate Cover

chocolate chips

tablespoon
coconut oil
Instructions
Prep
Line a loaf pan with parchment paper.
Make the Bars
Stir ingredients in a bowl with a spoon.
Spread this sticky batter on to the bottom of the lined loaf pan. Flatten.
Melt the chocolate chips and coconut oil in a microwave for 60 seconds.
Pour the melted chocolate over the bar batter.
Freeze the loaf pan for 30 minutes or long enough to be able slice into bars.
Notes
If your granola is hard with large chunks, use a food processor to make the bar mixture instead of stirring it in a bowl.
To sweeten the bars, use maple syrup instead of water.
