Frozen chocolate watermelon pops are chunks of watermelon served on a stick and coated in chocolate. A delicious finger treat for kids and adults and easy to make in literal minutes.
Prepare watermelon cubes: Cut seedless watermelon into 1-inch cubes. Pat dry with a paper towel, insert sticks and freeze lined up on a parchment-lined tray for at least 2 hours, or until solid
1 small watermelon, seedless
Melt the chocolate: Melt chocolate chips and coconut oil for 1 minutes in the microwave. Let it cool about 10 minutes.
1 cup chocolate chips, 2 tablespoon coconut oil
Dip the cubes: Working quickly, dip each frozen cube halfway into the melted chocolate. Let excess drip off, dip again if needed into cookie crumbs or salt, and place back on the parchment-lined tray.
Let Set: The chocolate will harden almost instantly. Enjoy immediately or return to the freezer for later.
