Add all the ingredients to a blender and process until the mixture is smooth, about 30 seconds. Enjoy immediately or refrigerate for 24 hours.
For long term storage, pour into ice cube trays and reblend when ready.

I used canned full fat coconut milk, but chilled boxed coconut milk also works, the smoothie won't be as thick.To boost protein, add ¼ cup of rinsed white navy beans.To use a date, drop it for 5 minutes in just boiled water and then pit it.*You can use 2 tablespoon lemon juice instead of the pineapple chunks.
