1tablespoonbrown sugaror coconut sugar
1teaspooncinnamon
½teaspoonvanilla
¼cupmilk, high fat
For cloud cold foam
¾cupmilk, high fat
Instructions
Make the base: In a heat-safe cup, like a pyrex measuring cup, combine cocoa, coffee, brown sugar, cinnamon, vanilla, and ¼ cup of milk.
1 tablespoon cocoa powder, 1 tablespoon brown sugar, 1 teaspoon cinnamon, ½ teaspoon vanilla, ¼ cup milk, high fat, ½ tablespoon instant coffee or 1 espresso shot
Froth it: Warm in the microwave for 30 seconds just to help the sugar dissolve. Use a hand frother to whip the warm cocoa mix until frothy and foamy.
Make the cloud cold foam: In a separate cup, froth the remaining ¾ cup of milk into cold foam. You can use a hand frother, an electric milk frother, a jar (shake vigorously), or a whisk. Set aside.
¾ cup milk, high fat
Paint on the cloud: Swirl or streak some of the cold foam along the inside of a glass or jar. This gives the “cloud” look. Use either froth or yogurt which sticks better.
Assemble: Fill the glass or jar with ice. Pour in the frothed cocoa, and top with cloud cold foam. Sprinkle with cinnamon or cocoa powder.
Notes
Use plain yogurt to streak the glass for a clouds that don't dissolve.Leave off the coffee entirely to make an iced cloud cocoa or iced frozen hot chocolate.
