Lemon superfood fruit popsicles are healthy and refreshing, bursting with fresh fruit color, and packed with nutrients from whole foods and superfoods. An easy high protein and dairy freefrozen treat for both kids and adults.
In a high-speed blender, combine ingredients. Blend until smooth and thick, like a pourable smoothie. Add maple syrup if you’d like more sweetness.
3 cups yogurt, ¼ cup cauliflower, frozen riced, ½ cup lemon juice, 1 teaspoon vanilla, pinch salt, 2-3 tablespoon maple syrup
Make colors
Divide mixture in half. Set aside one half for "white", and divide the second half evenly into 5 bowls. Press fruit or add superfood powder to each bowl to create each of the 5 colors. Use a fork to puree the fruit; use spoons to stir making color uniform.
½ cup raspberries, ¼ cup yogurt base, 1 teaspoon blue spirulina, ¼ cup yogurt base, ½ cup mango, ¼ cup yogurt base, ½ teaspoon matcha powder, ¼ cup yogurt base, ½ cup blackberries, ¼ cup yogurt base
Fill popsicle mold
Spoon white base into each mold, then add a color, then white, and keep alternating to create a tie-dye effect until the popsicle wells are full and your mixtures are gone.
Freeze the popsicles
Place popsicle molds in the freezer. After 30 minutes, insert sticks. Freeze for at least 4 hours or overnight until solid.
Unmold and Enjoy!
To release, run the molds under warm water for a few seconds. Store extra pops in an airtight container in the freezer for up to one month.
