A purple popsicle that can settle your nerves and set your mind at ease as well as give you a protein boost. Try these with store-bought culinary lavender, lavender tea, or your own home-grown lavender flowers.
Prepare fresh lavender tea. Steep 6 tsp lavender buds in 1 cup of hot water using a tea infuser and allow to cool completely. If you don't have a tea infuser, simple stir the tea into the hot water, steep for 2 minutes and pour the tea through a sieve to filter out the spent lavender buds.
Blend yogurt, syrup, lemon juice, cooled tea, and 2 tsp of lavender buds. Taste-test the mixture. Add more lemon if you want it more lemony; add more maple syrup if you want it sweeter. If you were lucky enough to use fresh lavender buds, you might find the flavor naturally sweet enough. Just FYI, you need about 2 cups of mixture to make 6 popsicles.
Pour mixture into molds. Freeze for 1/2 hour and then insert sticks (I don't always use the mold lid, sometimes it doesn't fit right.). Freeze mold at least 3-4 hours or overnight.
To remove pops, dip mold into a pot of hot water without allowing water to spill over top and reach popsicles.
Tug at each pop and wrap in parchment paper and store in freezer.
