These blue margarita popsicles prepared in 20 minutes using 4 ingredients to create a refreshing lemonade popsicle whether spiked with tequila to make a cocktail popsicle or a kid-friendly blue lemonade popsicle!
Squeeze lemons and limes to gather 1 cup of juice or measure out 1 cup from bottled quality juice. Add the juice to a blender.
½ cup lime juice, ½ cup lemon juice
Add the maple syrup and taste the mixture to adjust for sweetness.
2 tablespoon maple syrup
Choose which popsicle to make.
To Make Popsicle Mixture WITH Alcohol
To the juice mixture, add the alcohol and stir or shake, and taste again to see if adjustments are needed.*
¼ cup silver tequila, 2 tablespoon blue curacao
To Make Popsicle Mixture WITHOUT Alcohol
To the juice mixture, add either blue spirulina or blue butterfly pea tea. To make the Spirulina slurry, add the blue spirulina powder to water and stir until fully dissolved. To use the tea, mix it, let it cool, and add ¼ cup or more.*
1 tablespoon ¼ cup water + 1 teaspoon blue Spirulina powder, ¼ cup blue butterfly pea tea
Pour into Molds
Pour either mixture into the popsicle mold and insert sticks.
Freeze the mold for at least 4 hours.
Once removing the popsicles, wet the top of each popsicle and dotted on salt or coconut shreds to emulate a real margarita.
flakey salt, shredded coconut
Notes
*The blue can also be achieved by adding ¼ cup of blue gatorade which I recommended in an earlier version of this recipe, but Spirulina and butterfly pea tea are healthier.
