Chocolate buckwheat waffles are crispy on the outside, soft on the inside. Buckwheat is highly nutritious, full of protein and fiber. These buckwheat waffles are also dairy free, gluten-free, and refined sugar free. Prep ahead, freeze and pop into toaster for a quick breakfast.
Turn on waffle maker so it heats up. If your waffle maker is new, spray with oil cooking spray and rub it off - this is called seasoning it and is only done once.
Mix ingredients in a bowl with a spoon. You want your batter to be pourable like pancake batter - add milk if your mixture is too dry.
Fold in mini chocolate chips or cacao nibs.
Pour batter into hot waffle maker and make waffles - probably about 1-3 minutes but it depends on your waffle maker's directions. Usually they are done if you lift it and the waffles are not sticking.
Serve right away with maple syrup, or keep warm in a 200 F oven.
Notes
Storage. Waffles can be refrigerated in a sealed container for about a week. They can be frozen individually and added to a toaster when you are ready to eat.
