These glazed No Bake Carrot Cake Protein Balls are high in protein and taste just like fresh carrot cake. Mix up oil-free, grain free ingredients in minutes for this spicy energy bite that is dairy free, gluten free and refined sugar free.
1teaspoonpumpkin pie spice mixor cinnamon, ginger and nutmeg*
Coating
½cupcoconut butter or melted white chocolate
Instructions
Soak dates for 5 minutes in just boiled water, drain, pit.
Add all ingredients to a food processor and process to combine into a sticky mixture. If it seems too dry, add a teaspoon of water.
Roll the carrot cake bites into golf ball-sized balls.
Stir up a sugar glaze, or make coconut butter by blending fresh shredded coconut. Roll the balls in either mixture. Line on a cooling rack for a minute or two to set coating.
