    These glazed No Bake Carrot Cake Protein Balls are for when you are craving carrot cake but don't feel like baking. Mix up oil-free, grain free ingredients in minutes for this spicy energy bite that is dairy free, gluten free and refined sugar free.

    Carrot cake protein balls for when you want to eat carrot cake but don't want to bake. Mine are glazed in either white chocolate or coconut butter, and so easy to make - just mix, roll, and enjoy! This no bake carrot cake bite has the texture and flavor of baked carrot cake mostly because of a balance of carrots, rolled oats, spices and a mixture of nuts.

    The resulting carrot cake bite is high in fiber, protein and dairy free, gluten free and refined sugar free.

    Why You'll Love Carrot Cake Balls

    • These carrot cake protein balls are no bake, so no oven required for the classic taste of carrot cake!
    • Easy wholesome meal prep snack to have on hand for an energy bite boost!

    Ingredients

    • Rolled oats. You can also use quick oats, or even almond flour, and oat flour might also work.
    • Carrots. Use any form, but I found shredded to be most convenient!
    • Nuts. I used a mix of pecans and almonds
    • Nut butter. I used neutral flavored almond butter, but any nut butter works or use coconut oil.
    • Dates. Use only a few to help sweeten and glue the bites together. You can also use maple syrup instead.
    • Spices. Cinnamon, nutmeg and ginger.

    Dee's Tip: If you add shredded carrots, be sure not to process the mixture too long or the carrots will disappear. You can also use carrot chunks instead.

    Steps to Make Carrot Cake Protein Balls

    Step 1: Soak dates for 5 minutes in just boiled water.

    Step 2: Add all ingredients to a food processor.

    Step 3: Process into a sticky mixture. If it seems too dry, add a teaspoon or two of water or maple syrup or even runny nut butter.

    Step 4: Roll the carrot cake bites into golf ball-sized balls. Use ¼ cup cookie scoop and rolled with clean hands (or culinary gloves.)

    Step 5: Stir up a sugar glaze, or make coconut butter by blending fresh shredded coconut. Roll the balls in either mixture. Line on a cooling rack for a minute or two to set coating.

    Dee's Tip: If you want to use a blender instead, first blend up the dates alone, then add the other ingredients and process in bursts so you don't create a smoothie - you want a rough texture.

    Recipe Tips

    • Taste-test the carrot cake mixture and add a tablespoon or two of maple syrup if you want it sweeter.
    • For topping or coating use a sugar glaze or coconut butter.
    • Optional Fold-ins: You can fold into the carrot cake batter other nuts, mini chocolate chips, shredded coconut, or raisins.

    Storage

    • Room temperature. These bites can last a day at room temperature before it will dry out.
    • Refrigerated. Store these bites in an air tight container in the refrigerator for 3 days.
    • Frozen. After that, freeze for up to 3 months.

    What if my energy ball mixture seems dry?

    It's easy to adjust the texture of a no bake energy ball by adding water or maple syrup to make a sticky texture that is easy to roll into balls.

    Of course, use cashew, pecans, walnuts, and almonds - just follow the nut measurements in the recipe in a swap.
