    These chocolate hazelnut bars are no bake, creamy, and taste like Ferrero Rocher copycat chocolates. These healthy nutella bars are soft, topped with a creamy chocolate ganache and hazelnuts, and made with just 5 wholesome ingredients in 15 minutes.

    These easy no bake chocolate hazelnut bars are easy to make in a loaf pan, chilled in just 15 minutes, and made with wholesome ingredients. The nutella flavor comes from real hazelnuts, and the soft texture comes from almond flour and dates.

    Like Ferrero Rocher, only this treat is made with wholesome ingredients. And the topping is a 2-ingredient creamy chocolate ganache with milk that is an invention of my own.

    Ingredients

    Cocoa powder. Use unsweetened cocoa, either dutch processed or not.

    Dates. Soak them in just boiled water for 2-5 minutes, and pit.

    Almond flour. Or use oat flour to keep it lower in fat and nut free.

    Hazelnuts. Use whole or crushed, but if you use whole with skin, you'll need to remove the skin as it is bitter. The recipe contains directions.

    Peanut Butter. Use cashew or almond butter to avoid any peanut flavor. But any nut butter works to help create a creamy texture and add protein. Use a brand that has only nuts in the ingredients, no sugar.

    Milk. Use your favorite to add moisture to these bars.

    Topping: chocolate chips and milk made the creamiest chocolate ganache topping.

    Step by Step

    Prep

    Prepare dates: Soak the dates in just-boiled water for 10 minutes, pit and blend into a paste. If necessary, add a few tablespoons of water to help the dates blend.

    Prepare hazelnuts. Blend to crush, or if you have hazelnuts with skins, remove the skins as follows:.

    Step 1: Spread the whole hazelnuts on a pan and roast for 10 minutes at 400 F.

    Tip: Do not over roast or the nuts will taste burned.

    Step 2: Wrap the hot hazelnuts in a clean cloth for 15 minutes. Then rub the nuts together to remove skins. Crumble the nuts by running them through a food processor or blender.

    Make the bars

    Step 1: To a bowl add the ingredients for the bars, all except the hazelnuts.

    Step 2: Fold in the crushed hazelnuts.

    Step 3: Spoon the mixture into a parchment-lined loaf pan. Use the back of a spoon to smooth it out.

    Step 4: To make my chocolate ganache, melt the chocolate chips in the microwave for one minute, stir in warm milk, and dollop the topping on the bars.

    Step 5: Sprinkle crushed hazelnuts on top of chocolate topping. Freeze the bars for about 20 minutes, slice then refrigerate and enjoy.

    Recipe Tips

    Hazelnuts. Whole hazelnuts with skins are the most commonly found, however if you can buy skinless or chopped, you can cut some corners on this recipe. If you buy them skinless, you can skip the roasting to remove the skins. Just crush the skinless nuts with a food processor, blender, coffee grinder or mortar and pestle.

    Storage

    Store the sliced or unsliced bars in the refrigerator for about 4 days in a sealed container. After that, freeze them individually wrapped. To thaw, set on the counter to thaw for about 20 minutes before serving. They can last up to 3 months in a sealed container.

    Can you make these hazelnut bars without hazelnuts?

    Yes, just substitute peanuts, almonds or cashews or even pistachios instead.
